  1. Mix 500 g minced beef, 300 g onion, finely chopped, 1 tsp cumin, 1 tsp coriander, ¾ tsp salt; fill wrappers from 36 dumpling wrappers, 60 ml water for sealing and seal with water.

Steam · About 30 min

  1. Bring 2000 ml water to a boil; steam dumplings on oiled racks in batches 25–30 minutes until beef reaches 71°C / 160°F.

Sauces · About 10 min

  1. Mix 400 g yogurt, 15 g garlic, grated, 1 tsp dried mint. Simmer 25 ml neutral oil, 200 g cooked split peas, 300 g passata, ½ tsp salt 10 minutes. Serve dumplings over garlic yogurt with tomato peas on top.
