  1. Cook onion and garlic from 150 g onion, chopped, 20 g garlic, 500 g tomatoes, chopped, 1 tsp coriander powder, ½ tsp turmeric, ¾ tsp salt, 100 ml water in a spoonful of eggplant roasting oil 5 minutes; add remaining ingredients and simmer 15 minutes. Fold in eggplant.
