Steps
Prepare the rice and nuts · About 4 min
- Separate the grains of 720 ml cooked rice gently with a fork.

- Heat 2 tbsp neutral oil in the pan over medium heat.
- Add 60 ml peanuts.
- Stir for 3–4 minutes.

- Lift the peanuts into the bowl.
- If using cashews, add 1 tbsp cashews, optional to the pan.
- If using cashews, fry them for 1–2 minutes until pale gold.
- Lift any fried cashews into the bowl.
Make the tempering · About 1 min
- Add the remaining 1 tbsp neutral oil to the pan.
- Add 1 tsp mustard seeds.
- Cook for 30–60 seconds.

- Add 1 tsp split skinned urad dal.
- Stir for about 1 minute.

- Add 2 dried red chilies, 1 green chili, chopped and 12 curry leaves carefully.

- Turn off the heat.
- Stir in 1 pinch asafoetida and ½ tsp turmeric.

- Add the cooked rice, fried nuts and ½ tsp salt, adjust to taste.
- Stir over medium heat for 3–5 minutes.

- Turn off the heat.
- Fold in 2 tbsp lemon juice.
- Serve promptly.
Tips
- Timing starts with cooked rice. If using leftovers, use rice cooled promptly and refrigerated for no more than 24 hours; reheat only once.
