Steps
Start the tempering · About 3 min
- Heat 2 tbsp neutral oil in the saucepan over medium heat.
- Add ½ tsp mustard seeds.
- Cook for 30–60 seconds.

- Add 1 tsp urad dal.
- Stir for 1 minute.
Check: The dal should turn pale gold.
- Add 60 ml chopped shallots, 1 whole chopped green chili and 10 leaves curry leaves carefully.

Cook the vegetables · About 10 min
- Add 350 g finely shredded cabbage, 100 g finely grated carrot, ¼ tsp turmeric, ⅛ tsp asafoetida and ½ tsp salt.
- Turn the vegetables to distribute the spices.
- Add 60 ml water.
- Cover the saucepan.
- Cook over medium-low heat for 8–10 minutes, stirring halfway through.
Check: The cabbage should be tender but retain some bite.
- Remove the lid.
- Cook for 1–2 minutes.
Check: Excess water should evaporate from the bottom of the pan.
Finish · About 1 min
- Fold in 3 tbsp grated fresh coconut.
- Turn off the heat.
- Serve warm.
