- Bring 2500 ml water and 2 tsp salt to a boil. Add 320 g dried pasta; cook for the packet time, about 10–12 minutes. Reserve 120 ml cooking water, then drain.
Sear the chicken · About 8 min
- Heat 20 ml olive oil in a wide pan. Add 500 g chicken breast, sliced and ½ tsp salt; cook for 6–8 minutes, turning often. Do not wash raw chicken.
Check: Chicken must reach 74°C / 165°F. Transfer to a clean plate.
Simmer the sauce · About 12 min
- Cook 150 g onion, chopped in the same pan for 5 minutes. Add 10 g garlic, minced; stir for 1 minute. Add 400 g crushed tomatoes, 1 tsp dried oregano and ½ tsp black pepper; simmer for 6 minutes.
Combine · About 3 min
- Return chicken; add drained pasta and 15 g basil. Toss for 2–3 minutes, adding reserved pasta water a spoonful at a time.
