  1. Blend 500 g tomatoes, 300 g red peppers, 150 g onion, 10 g Scotch bonnet chili, 100 ml water. Cook onion in oil from 70 ml neutral oil, 100 g onion, sliced, 60 g tomato paste, 1 tsp thyme, 1 tsp curry powder 5 minutes, add paste 3 minutes, then blended sauce and spices; reduce 15 minutes.

Rice · About 30 min

  1. Add 450 g long-grain rice, rinsed, 600 ml vegetable stock, 2 bay leaves, 1 tsp salt; cover tightly and cook on low 25–30 minutes until tender. Add small splashes of hot water if needed.
