Brown beef in oil from 30 ml neutral oil, 1000 g beef chuck, cubed, 250 g onion, chopped, 200 g carrots, diced, 40 g plain flour, 500 ml ale, 400 ml beef stock, 1 tsp thyme, 1 tsp salt, add vegetables 8 minutes and flour 1 minute. Add ale, stock and seasoning; simmer covered 2 hours until tender.

  1. Cool filling 20 minutes, then transfer to a pie dish. Cover with pastry from 350 g puff pastry, 1 egg, beaten, seal edges, cut a vent and brush egg.

Bake · About 35 min

  1. Bake at 200°C / 400°F for 30–35 minutes until golden and centre reaches 74°C / 165°F.
